Pineapple Sour

Prep the Glassware

  • Fill a rocks glass with fresh ice and set it aside. Alternatively, if you prefer to serve it without ice, place a coupe glass in the freezer to chill.

The "Dry Shake" (No Ice)

  • In a cocktail shaker, combine the 2 oz Restart Vodka, 1 oz fresh lemon juice, 4 oz fresh pineapple juice, and 1/2 oz egg white. Seal the shaker firmly without adding ice and shake vigorously for 15 seconds. (Why? Shaking without ice allows the proteins in the egg white to emulsify with the pineapple juice, creating a rich, meringue-like foam.)

The "Wet Shake" (With Ice)

  • Open the shaker and fill it generously with ice. Re-seal it tightly and shake hard for another 10–12 seconds until the outside of the shaker is frosty and completely chilled.

Strain and Serve

  • Strain the cocktail into your prepared glass. If using a rocks glass, strain it over fresh ice; if using a coupe, strain it directly into the chilled, empty glass.

 

Garnish

  • The foam with a dried pineapple slice, two skewered marischino cherries and a sprig of mint (a few drops of Angostura bitters for aroma and a hightened experience).
